Nutella Chip Cookies


Apparently today is World Nutella Day.
Forget Valentine’s and President’s Day, we need more holidays like this.
Because Nutella really is something to celebrate.
Nutella Chip Cookies
Adapted from Culinary Concoctions, via Erin's Food FilesMakes about 4 dozen cookies.
Ingredients:

½ cup unsalted butter, at room temperature
1/2 cup granulated sugar
1/2 cup firmly packed light brown sugar
1/2 cup Nutella or other hazelnut chocolate spread
1 egg
1/2 teaspoon vanilla extract
1 1/2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1/3 cup mini chocolate chips

Directions:
Preheat oven to 350 degrees F.
Cream butter with an electric mixer about 1 minute until smooth. Add in both sugars. Beat on high speed about 3 minutes until light and fluffy, scraping down the sides of the bowl as needed.
With the mixer on low, add the egg and vanilla. Then add Nutella and mix until well combined.
In a small bowl whisk together the flour, baking soda, and salt. Slowly add dry ingredients to wet ingredients, and mix on low speed until incorporated. Increase the speed to medium and mix just until the dough is smooth. Fold in chocolate chips.
Using a small ice cream scoop (or a teaspoon), form the dough into balls and place on parchment-lined baking sheet. Bake 6-7 minutes or until set. Let cookies cool about 5 minutes and transfer to a rack to cool completely.

Oreo Cookies


1 package of Devils Food Cake
1/3 cup oil
2 eggs
Preheat oven to 350. Mix ingredients, roll into balls onto cookie sheet. Cook for 8 minutes
Frosting- You make your own cream cheese frosting or you can cheat like me and buy it already made :)

Orange Rolls

These orange rolls are so yummy and are great for breakfast, snack time or dessert! Enjoy!

Easy Butterflake Orange Rolls


12 Rhodes Texas Rolls, thawed but still cold
Zest from 1 large orange
3/4 cup sugar
1/3 cup butter, melted
Icing:
1 cup powdered sugar
1 tablespoon butter, melted
2-3 tablespoons fresh orange juice

Directions:
Cut each Texas roll into 5 equal pieces. Flatten each piece slightly. In a small bowl, combine orange zest and sugar. Dip both sides of each roll piece into butter and then orange sugar mixture. Stack five pieces together and place, on their sides, in a well sprayed muffin cup. Cover with plastic wrap and let rise until double in size. Remove wrap and bake at 350°F 15-20 minutes. Remove from pan immediately and place on cooling rack. Combine icing ingredients and mix well. Brush over rolls while still warm.

*** I made 14 rolls and needed to double the butter and cinnamon sugar ingredients!

Strawberry-Mango Crisp

For the Fruit Mixture:

1 qt. quartered strawberries
2 cups diced mangos
1/4 cup sugar
1/4 cup flour

For the Topping:

1 cup flour
1/2 cup rolled oats
1 cup brown sugar
1 stick of margarine

Preheat oven to 400
Mix the ingredients for the fruit mixture together in a large bowl.
Spread evenly into a 2-quart casserole dish. Set aside

Mix the dry ingredients for the topping together in a medium bowl
cut in the margarine until the mixture resembles small peas.
Spread evenly over the fruit mixture
Bake 35-45 minutes or until bubbly.
Great with ice cream!

Lemon Bars- Only 3 points!!



This is an easy recipe for some great lemon bars that taste delicious! The crust is buttery and tender, and the filling lemony and velvety. Yummy!

Weight Watchers Lemon Bars recipe
Makes 16 bars

Ingredients

For the crust
1/3 cup sweet unsalted butter
1 cup all-purpose flour
1/4 cup powdered sugar

For the topping
2 large eggs or egg whites, lightly beaten with a fork until foamy
3/4 cup granulated sugar
3 tablespoons lemon juice
1/2 teaspoon baking powder
2 tablespoons grated lemon zest
1/4 teaspoon salt (optional)

Additional ingredient
1/4 cup powdered sugar or icing sugar, for dusting tops

Preparation
1. Preheat the oven to 350° F.
2. Using a pastry blender, combine the crust ingredients until the mixture resembles crumbs.
3. Using your fingers, press the mixture into a greased and floured 8″ square glass baking pan (make sure that the entire bottom of the pan is evenly covered).
4. Bake partially for about 15 minutes, then remove from the oven.
5. While the crust is prebaking, combine the filling ingredients and pour over the warm crust.
6. Bake for about 15-20 minutes (or until lightly browned), being careful not to overbake.
7. Let cool completely.
8. Once cool, sift the powdered sugar over the top, according to your taste.
9. Slice into 16 bars and serve.

Nutritional information for one lemon bar: 123 calories, 4.5g fat, 0.3g fiber

Congo Bars

So easy and delicious!


1 3/4 c flour

1/2 tsp salt

1 cube of margarine

almost 1/3 cup of vegetable oil

2 1/2 tsp of baking powder

3 eggs

1 box (2 and 1/3 cups) of brown sugar

1 package of chocolate chips


Melt margarine and add sugar and oil. Cool a little before adding eggs, one at a time. Add dry ingredients and chocolate chips. Bake in a 10x15" pan for 25-30 minutes in a 350 degree oven.

Weird but Simple Brownies

First off this sounds super crazy and weird, but I promise you will not be disappointed!
All you need are these two ingredients:
(You can also use Low-Fat Brownie Mix)















First: take the can of black beans-rinse and drain them.

then put the beans in a blender or food processor

add 1 cup of water to the beans and blend




















add the slop into the brownie mix












Pour into baking pan. You can also add chocolate chips which I what I ended up doing
bake according to the box instructions..................















The end results: The most moist and perfect brownies, EVER!!!
